Autenta Coeur de Boeuf Sorbet
Cooking time 15 min. + 3 hours freezer

1 cup water
25 grams sugar
Juice of 1 lemon
2-3 ripe Autenta Coeur de Boeuf tomatoes for 2 dl juice
1 slice of lemon
  • Cook water with the sugar shortly and then leave to cool. Add the lemon juice.
  • Remove seeds from the tomatoes and puree it finely in a food processor. Rub the puree through a sieve for 2 dl tomato juice.
  • Mix the tomato juice with the sugar water and place in a container and freeze. Stir every half hour with a fork through the mixture. After about 3 hours you will have a delicious sorbet.
  • Serve the sorbet in a pretty glass with a lemon slice.

Delicious as an appetizer, dessert or a healthy snack for  4  people         {tip ::

  • Serve with a lemon liqueur!
  • For a sorbet with more pizzazz, there do a few drops of Tabasco!
  • Prefer an ice cream? Just a little longer in the freezer!

Carpaccio of Autenta Coeur de Boeuf
Cooking time 15 min.

2 half green Autenta Coeur de Boeuf tomatoes
Sea salt, pepper, olive oil
Buffalo Mozzarella
Fresh basil leaves
  • Cut the Coeur de Boeuf tomatoes into thin slices and divide among 4 plates.
  • Make to taste with salt and pepper and olive oil droplets.
  • Garnish with mozzarella and basil.

Delicious as a Starter or Side dish for  4  people         {tip ::

Autenta burger with a curry mayonnaise
Cooking time 15 min.

4 soft rolls
4 hamburgers
few leaves of lettuce
1 ball buffalo mozzarella cut into 4 slices
One half green Autenta Coeur de Boeuf tomato
Mayonnaise, yogurt, curry powder, salt and pepperolen
  • Grill the burgers on the barbecue.
  • Cut the rolls in half and grill these for a few minutes.
  • Make meanwhile the Curry mayonnaise: 1 tablespoon mayonnaise, 2 tablespoons yoghurt, curry powder, salt and pepper. Serve this separately.
  • Cover the rolls with lettuce, the burger, 1 slice of mozzarella and a thick disk Autenta Coeur de Boeuf tomato.
Delicious as a lunch dish for 4 people      {tip ::
  • With fried potatoes makes a delicious main course!
  • Place the Coeur de Boeuf on aluminum foil on the grill. Flavor is then more intense.

Stuffed Autenta Coeur de Boeuf
Cooking time 20 min.

50g smoked halibut
4 semi-ripe Autenta Coeur de Boeuf tomatoes
2 half sour apples
200g peeled shrimps
Dressing: vinegar, mustard, French mustard, powdered sugar and olive oil
Sea salt and freshly ground pepper
  • Cut the apples into small cubes.
  • To make the dressing: Mix 1 tablespoon vinegar 1 teaspoon mustard and a teaspoon of French mustard. teaspoon of powdered sugar with salt and pepper. Mix here dropwise 2 tablespoons olive oil.
  • Mix apple, shrimp and dressing.
  • Cut the top off the tomatoes and scoop out.
  • Fill the tomatoes, roll a rose of halibut and put it on top. Put the cap on it.
Delicious as a lunch dish for 4 people      {tip ::
  • Serve with a slice of multigrain bread.
  • Also delicious as a starter. Halve the portions!
